What is the difference between cinnamon and Vietnamese cinnamon? Vietnamese cinnamon, also known as Saigon cinnamon, is a varietal of Cassia cinnamon. It has the highest amount of volatile oil of all the cinnamons, so it's got the most aggressive flavor, peppery and bold, and can be bitter if it's used in abundance.
